A one-click action to check off when you've been in touch with someone on the Keep in Touch list (and mark as done), plus auto-add a "got in touch" note with the same one-click.

Maybe there need to be a more generic text than "We met".. "Got in touch" "Kept in touch" "reached out"? Its hard to find a word that just says you interacted without specifying how….
